This gluten-free version of lasagna from I Breathe I'm Hungry is a must-have recipe. Instead of traditional sheets of egg pasta, this lasagna is formed with layers of chickpea crepes. Canned chickpeas are pureed with milk, salt, and eggs to create the batter. It is then poured into a pan and cooked in a microwave for a minute (yes, it's really that easy!). The usual lasagna ingredients of tomato sauce and various cheeses are added between each layer. Gluten-free lasagna is a delicious dish to enjoy any night of the week.
