This caprese wrap from LeMoine Family Kitchen is a quick and easy vegetarian meal. Slices of tomato, mozzarella, and basil are drizzled with olive oil and balsamic vinegar and wrapped in a spinach tortilla. These wraps are great for lunch, dinner, or even a picnic.
Ingredients:
3 spinach & pesto wraps
1/2 lb fresh mozzarella, sliced thin
2 tomatoes, sliced thin
a few roasted peppers, thin strips
fresh basil
1/2 cup balsamic vinegar
