Gluten-free lemon poppy seed bread from The Roasted Root is the perfect dish to include on your Easter brunch table. The all purpose flour is replaced by oat flour. Many oats are produced in facilities where they can come in contact with wheat. To avoid cross contamination, make sure the package specifically says gluten-free. You can also make your own oat flour. Full fat coconut milk keeps the bread moist and adds a tropical note. Before serving, a lemon honey glaze is drizzled over top to enhance the lemon flavor.
