Sortachef
In 2004, Sortachef (Don Hogeland to friends and family) built a woodfired oven behind his house, from which he turns out crusty European-style breads, Italian pizzas, and a variety of succulent dishes tinged with the fire of applewood. He’s curious about many aspects of cooking and is constantly adding to his repertoire. He can be shaping loaves from a two-day-old dough, researching Armenian flatbread, and perfecting an antipasto recipe – all at the same time.
