Curried Oxtail
Ingredients
1 piece ginger - (abt 1")
1 lemongrass stalk
1 medium onion coarsely chopped
1 tablespoon chili garlic sauce
cup water
1 medium potato
1 medium carrot
small jicama
2 pounds oxtail cut into segments
2 tablespoons cooking oil
2 tablespoons curry powder
10 dried curry leaves (optional)
1 can unsweetened coconut milk - (13 ½ oz)
3 cups water
cup soy sauce
1 tablespoon brown sugar - (packed)
Mint leaves for garnish

In a large pan, parboil oxtail in water to cover for 5 minutes; pour into a colander and let drain.
