Beet Pancakes

Ingredients

3 mediums beets cooked and grated
3 lrgs eggs lightly beaten or the equivalent egg substitute
cup flour
pinch sugar

Preparation

Mix all ingredients and drop by spoonfuls into a hot nonstick skillet. Use a spatula to press down on the batter to form flat pancakes, and cook about 1-1/2 minutes on each side.

Serve with nonfat yogurt or sour cream.
