Meatless Monday: Sprout and Beet Burger

This mouth-watering vegan burger is a perfect meal for Meatless Monday. The original recipe uses a bun, but for a more nutrient dense meal, serve it with mashed sweet potato or quinoa. For added protein, top with tahini.

Beet and Sprout Burger

1 beet, chopped
1 cup mung bean sprouts
1/2 cup sunflower seeds
½ cup sauteed onions
1 tsp chilli powder
1 tsp curry powder
½ juice of a lime
Handful of coriander
Brown rice flour, if needed
Gluten free breadcrumbs
Coconut oil
Himalayan salt and pepper, to taste

Possible Trimmings:
Chutney
Heirloom tomatoes, sliced
Arugula, finely chopped
Broccoli sprouts
Avocado
