Low Iodine Living: Day 8

June 13, 2011

Fettucine Primavera

I can't believe it has been a week! Only 44 hours left at the time I'm writing - woohoo! Spent all morning at the hospital for the preliminary body scan, magical nuclear pill crafting while I waited patiently in the lobby, then ingestion of the Magic Blue Pill (irony?). So far, so good. Sitting approximately 6 feet from the closest living creature, on my already slightly radioactive laptop and writing to you -- and listening to songs like "Tic Tic Tic" by Doris Day. Did you know that anyone who undergoes RAI treatment will set off Geiger counters and any other anti-terrorist radioactive material detection equipment for 3-4 months after treatment? I didn't until I was given my letter today - apparently patients crossing the border between Washington and Canada have been detained until a doctor could be reached to verify their treatment? Tell me that isn't a) frightening and b) a colossal pain in the butt.

Breakfast
Another no-go today; RAI treatment this morning means another overnight fast.

Lunch
Pasta Primavera with olive oil & balsamic vinegar dressing

Snack
1 cup Air-Popped Popcorn with 2 TBSP coconut oil and kosher salt
3-4 dates

Dinner
Chicken Marsala (using Jules Gluten Free Flour and unsalted butter **update! forgot to mention that I also used homemade chicken broth/stock!**)
Garlic Mashed Potatoes
