Greek Salad

Around here, Sundays are lazy days; stay-home-and-watch-a-movie day, never-change-out-of-pajamas day, read-a-book-in-the-park day, get-up-late-go-to-bed-early day. And on days like today, "What's for dinner?" looms like a storm cloud on the horizon - you know those days when, even if you're a die-hard foodie and kitchen connoisseur, cooking just feels like a chore. In an effort to deal with both those days and my Sunday non-routine, I bring you Simple Sunday and a super simple recipe to go with it!

Quick and Easy Greek Salad
Serves 4 (as a side dish)

This simple, refreshing side dish is light and flavorful, transporting you to the Mediterranean in a matter of seconds. Like it hot? Spice things up (literally!) by adding pickled pepperoncini, chopped and tossed with the salad or whole on the side. Other optional add-ins: a drizzle of balsamic vinegar, dill or oregano, and/or other marinated olives.

5 large ripe tomatoes
1 large red onion, sliced thinly
1 large cucumber
1/4 pound greek feta
1 dozen Kalamata olives 
1/4 cup high-quality extra virgin olive oil
