Sometimes there is nothing better than a bowl of homemade soup. During this time of year, I love to make fresh tomato soup because the tomatoes are at their best. The flavor of freshly made tomato soup does not compare to the canned version, the tomatoes are sweet, the basil is refreshing, and the broth is rich. It's really that good. Ingredients:
4 tablespoons olive oil
2 cups red onion, chopped
2 carrots, chopped
10 large, very ripe tomatoes, peels and stems/core removed, seeded if possible
1 tablespoon sugar
1 tablespoon sea salt
1 tablespoon freshly ground black pepper
