Usually around this time of year, we are drawn to hearty red sauces but I have a sauce that will change all that. Pipián is a green sauce made with toasted pumpkin seeds or pepitas, cumin, garlic, chiles, and cilantro. It is a piquant, nutty, and rich in flavor. You can use this sauce as a rub for meat, pour over enchiladas, or served over poached chicken. This video from the Culinary Institute of America shows you how to make this incredible sauce. It is a must-make sauce for the fall season.
