Pomegranate Chocolate Chunk Oatmeal Cookies

These pomegranate chocolate chunk oatmeal cookies from Hidden Ponies are a unique take on the classic oatmeal cookie.  The pomegranate seeds add a burst of tartness to the cookie while the oatmeal adds texture and the chocolate adds richness.  The best way to de-seed a pomegranate aside from just buying the seeds themselves is to remove them in a bowl of water.  This way you will keep your kitchen clean and your clothes unstained.  Pomegranate chocolate chunk oatmeal cookies are a delicious o start to 2012.

Pomegranate Chocolate Chunk Oatmeal Cookies
Recipe from Hidden Ponies

Ingredients:

1/2 cup butter, room temperature
1/2 cup brown sugar, lightly packed
1/2 cup granulated sugar
1 egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1 cup quick cooking oats
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chunks (semi-sweet or dark; about 4 oz chopped chocolate/4 sqaures of baking chocolate)
1 cup pomegranate arils (about 1 pomegranate)

Thanks for the feature! I loved these cookies...and another great way to de-seed the pomegranate is to cut it in half and whack each half with the back of a spoon over a large bowl - quicker and more fun :)
