
Miso glazed eggplant from Daisy's World is a splendidly simple summertime dish. Thick slices of Japanese eggplant are broiled in the oven until almost tender. They are then covered in a miso glaze comprised of white miso, mirin, and sugar. This dish can also be made on the grill which would add a nice smoky flavor. Miso glazed eggplant would be delicious alongside a piece of marinated tofu, a piece of fish, or even chicken.
Ingredients:
2 tablespoons mirin
2 tablespoons sake
1/4 cup white, or “shiro” miso
1 tablespoons sugar
1/2 teaspoon sesame oil
4 Japanese eggplants, stemmed, split in half lengthwise and then cut into 3- to 4-inch pieces
vegetable oil, as needed to coat eggplant
2 teasoons toasted sesame seeds, for garnish
sliced scallions, for garnish
