I think the secret of cottage pie is method, and perfection is lots of little things done well, it’s as simple as that. I think you have to question what you’re trying to do. I think, you know, whenever I cook, I always think about what I’m cooking, I always think what do I want to achieve at the end of it so I have a picture in my mind, I can almost see it before I’ve cooked it. There’s a taste which I want and so therefore I work at achieving that taste. What does a stockpot do for us? It flavors, it seasons, it makes something delicious.
Beef Cottage Pie
Serves 8
2 1/4 pounds lean minced beef
1 tablespoon vegetable oil
½ onion, chopped
1 clove of garlic, finely chopped
5 tablespoon Worcestershire sauce
1 tablespoon tomato purée
1 tsp flour
1 Knorr Beef Stock Pot
1 1/2 cups water
A few sprigs of thyme
1 turnip, diced
1 carrot, diced
1 bay leaf
For the Creamed Potato Topping (Chef White's version)
2 1/4 pounds potatoes
1/4 cup hot milk
5 tablespoons butter, softened (could do half oil/half butter)
1 egg yolk
