It's milking season, and we need to find plenty of uses for our delicious goat's milk. Making mozzarella is a beginner's cheese. It is simple enough to make in the microwave, but what fun is that?
Our family enjoys making it by hand, and eating it fresh, in this Caprese salad. You can't get much more seasonal than that.
8 ounces mozzarella cheese
1/4 cup basil leaves
