Marinated cucumber salad is as delicious as it is simple. Thinly sliced cucumber is tossed with red onion and marinated in vinegar, salt and pepper. You can flavor this salad a hundred different ways. This recipe leans towards Asian flavors but swap out the rice wine vinegar for red wine vinegar and fresh mint for a Mediterranean salad or add chopped fresh dill for something more Scandanavian flavored.
Ingredients:
3 large Cucumbers
1 Red Onion
6 oz of Rice wine Vinegar
3 Tablespoons Sugar
1 tablespoon of Sesame Oil
pinch of Red Pepper Flakes
salt and pepper to taste
Directions:
Put cucumbers and onion in a food processor and slice extremely thin
Put in a bowl and add vinegar, oil, and sugar.
Season with salt and pepper
Mix well and refrigerate for one hour
Top with Red Pepper Flakes
