Light and crispy, these rhubarb pockets are filled with delicious rhubarb sauce. It's a great recipe to welcome in the fresh garden season. Thanks to Foodista contributor Sonia Guptka for this delicious snack idea.

1/4 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
1/4 teaspoon vanilla extract
