Leaving a plate of cookies for Santa is an annual tradition in our house. Some families offer him chocolate chip cookies, store bought sandwich cookies (like Oreos), but we have always baked a fresh batch of snickerdoodles. While I love to make these cookies a hundred percent from scratch, on particularly busy Christmas', I turn to these quick and easy 5 ingredient snickerdoodles. Instead of measuring out cups of flour, teaspoons of baking powder and baking soda, and a dash of salt, these ingredients are all included in boxed white cake mix. This time saving trick makes incredibly soft snickerdoodles in just 20 minutes. Santa will be absolutely thrilled to receive these tasty snickerdoodles on Christmas eve.
Snickerdoodles

Ingredients:
1 package white cake mix
1/2 cup butter or margarine, melted (I prefer using unsalted butter)
1 egg
2 tablespoons sugar
1 teaspoon ground cinnamon
Directions:
Step 1. Heat oven to 350°F (325°F for dark or nonstick cookie sheets). Mix cake mix, butter and egg in large bowl with spoon until dough forms (some dry mix will remain).
Step 2: Shape dough into 1-inch balls. Mix sugar and cinnamon in small bowl. Roll balls in cinnamon-sugar mixture. Place about 2 inches apart on ungreased cookie sheet.
Step 3: Bake 10 to 12 minutes or until set. Remove from cookie sheet to cooling rack.

*If you are really short on time, you can roll refrigerated sugar cookie dough in cinnamon sugar before baking to give plain sugar cookies a little holiday zest.
**I like to add white chocolate chips to this recipe.
