Chocolate Peanut Butter Skillet Cookie
Ingredients:
1 cup (2 sticks) unsalted butter, softened to room temperature
1/2 cup granulated sugar
1 cup packed light brown sugar
2 large eggs, room temperature
2 teaspoons pure vanilla extract
1/2 cup creamy peanut butter
2 1/2 cups all-purpose flour
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon fine sea salt
1/2 cup old fashioned rolled oats
1/2 cup Reese's Pieces
1/2 cup semi-sweet chocolate chips
vanilla ice cream for garnish
Directions:
Step 1: Preheat oven to 350 degrees Fahrenheit. Butter a clean cast iron skillet and set aside.
Step 2: In a mixing bowl, cream together both sugars and butter. It should appear light and fluffy. Add in the eggs one at a time, continuously beating the mixture until the egg is well incorporated. Add the vanilla extract and peanut butter.
Step 3: Sift together flour, cornstarch, baking soda, and salt. Mix in the oats. Add the flour to the wet ingredients in three installments being careful not to overmix the dough. Fold in the Reese's Pieces and chocolate chips.
