Grilled pork tenderloin with chimichurri from A Spicy Perspective is a meal dad won't soon forget. Tender pork tendeloin is marinated in chimichurri sauce, an Argentinean condiment made from a blend of herbs, lemon, garlic, and olive oil, before being charred on the grill. While the pork is cooking, you can add some vegetable to the flames. Serve this delicious South American inspired with white rice and a cool glass of crisp white wine.
Grilled Pork Tenderloin with Chimichurri
Ingredients:
3 pounds pork tenderloins
1 bunch fresh parsley, stems removed
1 cup olive oil
1 tablespoon cumin
1 teaspoon salt
3 garlic cloves, minced
1/2 teaspoon dried crushed red pepper
1 pound asparagus
(ANY combination of long veggies would work for this!)
